Ingredients
1lb/450g fresh or frozen broccoli
salt
6tbsp olive oil
75g/3oz speck or lean smoked bacon, rinded and cut into small strips
2 cloves garlic, peeled and finely chopped
300ml/10fl oz milk
450g/1lb fresh orecchiette
50g/2oz freshly grated parmesan cheese
freshly ground black pepper
Method
1. Boil the broccoli in salted water until tender and drain. Chop the broccoli very finely.
2. Heat the oil and fry the speck or bacon until brown. Add the garlic and cook for another minute.
3. Add the broccoli and salt, and then stir in the milk. Cook the sauce, stirring until smooth.
4. Meanwhile, cook the pasta for 6 minutes or until al dente. Drain and add to the sauce. Toss well with the parmesan cheese, add some black pepper and serve.
