Ingredients
- For the cheese on toast

2 slices white bread
85g/3oz taleggio cheese, sliced
- For the tomato and herb salsa

2 vine tomatoes, de-seeded and chopped
1 clove garlic, finely chopped
2 tbsp chopped fresh parsley
1 handful fresh basil leaves, torn
salt and freshly ground black pepper
Preparation method

Preheat the oven to 180C/350F/Gas 4.

For the cheese on toast, toast the bread in the oven for 3-4 minutes, or until lightly golden. Lay the slices of cheese on top of the toast then grill for 2-3 minutes, or until the cheese is melted and bubbling.

For the tomato and herb salsa, combine all of the salsa ingredients together in a bowl and mix well to combine.

To serve, place the cheese on toast on a serving plate and spoon over the tomato and herb salsa.
