Ingredients
½ sweet potato, peeled and grated
1 banana shallot, finely chopped
2 free-range eggs
50g/2oz plain flour
50g/2oz Roquefort cheese, crumbled
1 tsp chopped dill, plus extra leaves to garnish
salt and freshly ground black pepper
1 tbsp olive oil
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. In a large bowl mix together the grated potato, shallot, eggs, flour, Roquefort and dill. Season with salt and freshly ground black pepper.
3. Heat the olive oil in a small frying pan. Cook the platski for five minutes on each side until golden.
4. Place in the oven and cook for five minutes.
5. To serve, turn the platski out onto a warm plate and garnish with dill.
