Ingredients
For the fritters
55g/2oz plain flour
55g/2oz cornflour
1 free-range egg yolk
½ red chilli, chopped
water, to bind
2 tbsp chopped fresh coriander
85g/3oz canned corned beef
4 tbsp vegetable oil
For the chilli soy dipping sauce
2 tbsp soy sauce
1 tbsp sesame oil
¼ red chilli, chopped
Method
1. For the fritters, combine the plain flour, cornflour, egg yolk and chilli in a bowl and add enough water for a batter the consistency of double cream. Stir in the chopped coriander and corned beef.
2. Heat the vegetable oil in a pan and fry spoonfuls of the batter for 2-3 minutes on both sides, or until golden-brown and crisp all over. Drain on kitchen paper.
3. For the dipping sauce, combine all of the dipping sauce ingredients in a bowl and mix well.
4. Serve the fritters with the dipping sauce on the side.
