Ingredients
2 tbsp olive oil
½ onion, chopped
2 garlic cloves, chopped
2 handfuls spinach leaves
75ml/2½fl oz double cream
200g/7oz spaghettini (or spaghetti), cooked according to packet instructions
salt and freshly ground black pepper
1 tbsp grated parmesan, to serve
Method
1. Heat the oil in a frying pan over a medium heat, add the onion and garlic and fry for 3-4 minutes, or until softened.
2. Add the spinach and fry for a further 1-2 minutes, or until wilted.
3. Add the double cream and the cooked spaghettini and season, to taste, with salt and freshly ground black pepper. Continue to simmer for a further 1-2 minutes, or until the mixture has warmed through.
4. To serve, spoon the pasta onto a serving plate. Sprinkle over the grated parmesan.
