Ingredients
½ corn on the cob
85g/3oz butter
½ tsp cayenne pepper
½ lime, zest only
1 tbsp coriander, finely chopped
Method
1. Place the corn on the cob into a saucepan of boiling water and boil for 8-10 minutes or until the sweetcorn is cooked and tender. Remove the corn on the cob from pan and keep warm.
1. In another saucepan, heat the butter, cayenne pepper, lemon zest and coriander until melted together.
2. To serve, immediately pour the sauce over the hot corn on the cob.
