Waffle bread and butter pudding

Ingredients

250ml/9fl oz double cream
3 free-range eggs, beaten
50g/1¾oz caster sugar
2 waffles, torn into small pieces
1 orange, peeled and sliced into rounds

Method

1. Preheat the oven to 200C/400F/Gas 6.
2. Place the cream in a saucepan and warm gently. Do not boil.
3. In a bowl whisk the eggs with the sugar.
4. Add the warmed cream to the egg mixture.
5. Line a baking dish with half of the waffle pieces. Pour over the egg mixture and top with the remaining waffles. Place into the oven and bake for eight minutes, or until golden and cooked.
6. Remove from the oven, garnish with orange slices and serve immediately.
