Ingredients
For the fool
125ml/4fl oz double cream
55g/2oz yoghurt
1 tsp vanilla essence
55g/2oz raspberries
For the brittle
110g/4oz caster sugar
55g/2oz sesame seeds
Method
1. For the fool, mix together all of the ingredients in a bowl, then pour into a tall dessert glass.
2. For the brittle, melt the sugar in a saucepan over a high heat until golden, then remove from the heat.
3. Add the sesame seeds and stir well. Pour onto a clean baking sheet and place into the freezer to cool. Once set, remove from the freezer and cut up the brittle and use to garnish the fool.
