Ingredients
½ cooking apple, core removed
2 tbsp soft brown sugar
½ tsp ground cinnamon
1 tbsp honey, plus extra to serve
3 free-range egg whites
175g/6oz caster sugar
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Place the apple, cut side facing upwards, onto a baking tray. Sprinkle over the sugar and cinnamon and drizzle over the honey. Transfer to the oven and bake for 5-7 minutes, or
until the apple is tender and the top is golden-brown.
3. Place the egg whites into a clean, dry bowl and whisk until stiff peaks are formed when the whisk is removed. Gradually add the sugar, one tablespoon at a time, and whisk until the mixture is glossy and all the sugar has been incorporated.
4. Spoon the egg mixture into a piping bag and pipe over the apple. Using a chefs' blow torch, heat the meringue until pale golden-brown. (Alternatively,
preheat the grill to its highest setting and heat the meringue for 2-3 minutes, or until pale golden-brown.)
5. Serve the baked apple on a plate with more honey drizzled on top.
