Ingredients
butter, for greasing
caster sugar, for sprinkling
100g/3½oz raspberries
½ pineapple, peeled, cored and thinly sliced
50g/1¾oz digestive biscuits, crushed
2 tbsp honey
icing sugar, for dusting
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Grease a 12cm/5in gratin dish with butter and sprinkle with caster sugar.
3. Place the raspberries and pineapple slices into the dish and sprinkle the digestive crumbs over the fruit.
4. Drizzle with the honey and place in the oven to bake for ten minutes, or until cooked.
5. To serve, sprinkle with a dusting of icing sugar.
