Caramelised fig tart

Ingredients

55g/2oz butter, melted
2 tbsp soft brown sugar
2 fresh figs, cut in half
3 sheets ready-made filo pastry

Method

1. Preheat the oven to 200C/400F/Gas 6.
2. Place two tablespoons of the melted butter, the sugar and the fig halves into an ovenproof frying pan. Fry over a medium heat for 2-3 minutes, or until golden-brown.
3. Scrunch up the filo pastry sheets and place them on top of the caramelised figs. Drizzle with the remaining melted butter.
4. Transfer to the oven and roast for 10-12 minutes, or until the pastry is crisp and golden-brown.
5. To serve, transfer the pan contents to a serving plate with the filo pastry on top. Serve immediately.
