Ingredients
4-6 firm pears
1 medium orange
450ml/¾ pint red wine
50g/2oz caster sugar
1 cinnamon stick
4 whole cloves
2 tsp arrowroot
Method
1. Peel the pears and slice a thin disc off the bottom of each so they can stand upright. Put in a large pan. Pare the orange rind and add to the pan with the juice from the orange. Add the wine, sugar and spices. Bring to the boil, cover and simmer for 40-45 minutes, turning the pears around once, until they are tender.
2. Transfer the pears to a serving bowl. Mix the arrowroot with two tbspcold water and stir into the pan. Bring to the boil, stirring until thickened. Cool, then strain; discard the spices. Pour the sauce over the pears. Chill, then serve with cream or yoghurt.
