Ingredients
3 eggs, beaten
olive oil
25g/1oz marinated artichokes
25g/1oz taleggio cheese, sliced
Method
1. Preheat the grill to high.
2. Add a little olive oil to two small blini pans or a small frying pan and heat over a medium heat.
3. Add the whisked eggs to the pans or pan and cook for two minutes.
4. Place the artichokes on top of the eggs, then the cheese.
5. Place under the grill for two minutes until golden.
6. Serve.
