Ingredients
For the soufflé
3 free-range eggs, separated
150g/5½oz melted chocolate
1 tbsp chopped hazelnuts
unsalted butter, for greasing
For the warm berry sauce
25g/1oz mixed berries
1 tsp caster sugar
1 tbsp hot water
Method
1. Heat a flat baking tray in the oven to 200C/400F/Gas 6.
2. To make the soufflé, mix the egg yolks and chopped nuts into the melted chocolate.
3. Whisk the egg whites until stiff, then fold into the melted chocolate mixture.
4. Grease two ramekins and spoon in the mixture.
5. Place onto the hot baking trays and bake for 12 minutes.
6. Meanwhile, to make the berry sauce, place the berries, sugar and water into a small frying pan and cook together for three minutes.
7. To serve, place the soufflé on a plate with the berry sauce on the side in a small bowl.
