Thin fettuccine with garlic, olive oil and parsley

Ingredients

3 sheets fresh lasagne, cut into thin strips
1 tbsp vegetable oil
2 cloves garlic, crushed
½ red chilli, finely chopped
2 tbsp chopped parsley
25g/1oz mozzarella, finely chopped

Method

1. Bring a pan of water to the boil and cook the fettuccine strips for 2 minutes, then drain.
2. In a small wok, heat the oil and cook the garlic and chilli for 3 minutes.
3. Add the parsley and stir through the pasta with the mozzarella.
