Ingredients
3 tbsp olive oil
½ red chilli, chopped
2 garlic cloves, peeled, chopped
3 handfuls spinach leaves, washed, roughly sliced
salt and freshly ground black pepper
150g/5½oz fresh tagliatelle, cooked according to packet instructions, drained
Method
1. Heat the oil in a frying pan over a medium heat and fry the chilli and garlic for 2-3 minutes. Add the spinach and continue to fry for 2-3 minutes, or until the spinach has wilted down. Season, to taste, with salt and freshly ground black pepper.
2. Add the cooked tagliatelle and stir well until the sauce coats the tagliatelle. Serve immediately.
