Ingredients
50g/1¾oz butter
50g/1¾oz dried mixed fruit
1 tsp brown sugar
½ orange, juice only
4 free-range eggs, lightly whisked
1 tsp icing sugar, to dust
Method
1. Melt half of the butter in a frying pan over a medium heat and add the dried fruit, sugar and orange juice. Bring to the boil and reduce to a thick syrup and set aside.
2. Melt the other half of the butter in a separate frying pan. Add the eggs and cook, stirring at first then allowing the eggs to settle and set into an omelette.
3. Roll up the omelette and turn out onto a large warm plate. Slice lengthways down the centre of the omelette and spoon over the fruit syrup. Dust with icing sugar and serve at once.
