Ingredients
For the scrambled eggs
2 tbsp butter
3 free-range eggs
3 tbsp double cream
salt and freshly ground black pepper
2 slices toast
2 slices smoked salmon
Method
1. For the scrambled eggs, on a low heat in a saucepan melt the butter.
2. Whisk in the eggs, stirring continuously.
3. Once thick add the double cream.
4. Remove from the heat and season.
5. To serve, place the two slices of toast in the middle of the plate. Spoon over the scrambled eggs and place the smoked salmon on top.
