Ingredients
4 egg whites
4 tbsp icing sugar
For the kiwi purée
1 kiwi, peeled
1 orange, juice only
To serve
150ml/5¼fl oz double cream, whipped
2 tbsp honey
Method
1. Whisk the egg whites and icing sugar together until the mixture forms stiff peaks.
2. Spoon the mixture onto a sheet lined with microwavable baking paper (such as Teflon) and microwave for 3-4 minutes on medium-high depending on the power of your microwave.
3. Meanwhile, to make the kiwi purée, crush the kiwi flesh with the orange juice in a bowl.
4. When the meringues are cooked, crush them into bite-sized pieces and mix together with the kiwi purée, whipped cream and honey.
5. Spoon into a glass and serve.
