Ingredients
250ml/10fl oz vegetable oil, for deep-frying
100g/3½oz ready-made rice noodles
Method
1. Heat the oil in a deep heavy-bottomed saucepan until a breadcrumb sizzles and turns brown when dropped into it (CAUTION: hot oil can be dangerous - do not leave unattended!)
2. Add the rice noodles to the oil. They will puff up immediately. After a few seconds, carefully remove the cooked noodles from the oil with a slotted spoon and drain onto kitchen paper.
3. Serve warm in a large bowl.
