Ingredients
For the teriyaki dressing
1 tbsp soy sauce
1 tbsp clear honey
½ lime, juice only
For the crisp noodles
500ml/18fl oz vegetable oil
100g/3½oz rice noodles
1 tbsp chopped fresh coriander
salt and freshly ground black pepper
Method
1. To make the dressing, combine the soy sauce, honey and lime juice in a small bowl.
2. To make the crisp noodles, heat the oil to 180C/350F in a deep saucepan. The oil will be ready when a breadcrumb sizzles in it. (CAUTION: hot oil is dangerous. Do not leave unattended.)
3. Deep fry the noodles for 30 seconds (the noodles will puff up instantly). Turn off the heat, remove the noodles with a slotted spoon and drain on kitchen paper.
4. To serve, place the crisp noodles in a large bowl, drizzle over the dressing and sprinkle with the coriander.
