Ingredients
150ml/5fl oz double cream
½ tsp ground cinnamon
1 tbsp caster sugar
1 orange, peeled, segmented and chopped
1 lemon, peeled, segmented and chopped
2 tbsp chopped fresh mint
1 tbsp cashew nuts, chopped
Method
1. Whip the cream together with the cinnamon and sugar in a bowl until stiff peaks form when the whisk is removed.
2. Fold in the chopped orange, lemon and mint and spoon into a metal chefs' ring set on a serving plate.
3. Remove the ring, scatter over the chopped cashews and serve immediately.
