Banana and ginger pan pudding - Food - Recipes

Ingredients


For the batter
55g/2oz plain flour
1 tbsp caster sugar
1 free-range egg
enough milk to form a batter


For the bananas
30g/1oz butter
30g/1oz chocolate, chopped
2 bananas, chopped
2 pieces of stem ginger, chopped


For the sauce
85g/3oz chocolate
3 tbsp double cream
30g/1oz butter
icing sugar, to serve


Method
1. Preheat the oven to 190C/375F/Gas 5.
2. For the batter, place the flour and caster sugar into an ovenproof pudding basin. Whisk in the egg and add just enough milk to form a batter, the consistency of double cream.
3.For the banana, heat the butter and chocolate in a small saucepan over a low heat and stir to melt and combine.
4. Add the bananas and ginger and pour into the batter. Stir to combine.
5. Place in the oven for 8-10 minutes until set and golden brown.
6. For the sauce, heat the chocolate, cream and butter in a small pan over a low heat until melted and combined.
7. To serve, the pudding with the chocolate sauce and dust with icing sugar.
