Tofu mutter paneer

This is a cheat’s version of mutter paneer using shop-bought tofu rather than traditional home-made cheese cubes (paneer).
Ingredients
2 tbsp rapeseed oil
½ tsp mustard seeds
½ tsp cumin seeds
1 small onion, chopped
2 medium tomatoes, chopped
1 tsp tomato purée
1 tsp ground cumin
1 tsp ground coriander
1 tbsp chopped fresh coriander
½ tsp red chilli powder
½ tsp ground turmeric
300g/10½oz firm tofu, chopped into 2cm/¾in cubes
100ml/3½fl oz water
450g/1lb frozen peas
rice or chapattis, to serve
Preparation method

Cut the tofu into 2cm/¾in cubes and set aside.

Heat the oil in a frying pan, and the mustard seeds and cumin seeds. When the seeds begin to pop, add the onion and cook for 4-5 minutes, or until softened. (Take care to avoid the seeds popping into your eyes and face).

Add the tomatoes, tomato purée and all the spices. Simmer for five minutes.

Add the tofu pieces and the water. Bring to the boil and then add the peas. Reduce the heat and simmer for 10 minutes.

Serve with rice or chapattis.
