Ratatouille with goats' cheese

Ingredients

2 tbsp olive oil
¼ onion, finely chopped
2 garlic cloves, crushed
½ courgette, chopped
5 mixed red and yellow cherry tomatoes, halved
2 tbsp white wine
1 tbsp tomato ketchup
1 tbsp chopped fresh thyme
2 tbsp chopped fresh basil
salt and freshly ground black pepper
70g/2½oz goats' cheese log, sliced
1 sprig fresh rosemary, to garnish

Method

1. Preheat the oven to 180C/350F/Gas 4.
2. Heat the oil in a frying pan and gently fry the onion and garlic until translucent, about 3-4 minutes. Add the courgette and tomatoes and stir.
3. Pour in the white wine and simmer until reduced slightly. Add the ketchup, thyme and basil and season, to taste, with salt and freshly ground black pepper. Stir well and simmer for 5-6 minutes.
4. Transfer the mixture to a gratin dish and top with the cheese slices. Place in the oven for 2-3 minutes until the cheese begins to melt. Serve garnished with a sprig of rosemary.
