110g/4oz ready-made puff pastry, rolled out thinly into a square.

110g/4oz goats' cheese, crumbled

1 egg, beaten

drizzle of balsamic vinegar

fresh basil leaves

Preparation method
Preheat the oven to 220C/425F/Gas 7.
Place the cheese onto the pastry, leaving a 2cm/1in border clear of cheese all round. Fold over the clear pastry to create a thick border around the cheese and crimp the edges with a fork.
Brush the pastry with the egg, then place into the oven to bake for 10-15 minutes, until the pastry has risen and is golden.
Serve the tart drizzled with balsamic vinegar and garnished with fresh basil leaves.
