Dauphinoise Brie cheese potatoes

Ingredients

150ml/5fl oz double cream
150ml/5fl oz milk
1 garlic clove, crushed
salt and freshly ground black pepper
85g/3oz Brie, chopped
½ large baking potato, peeled and sliced thinly on a mandolin
25g/1oz butter

Method

1. Preheat the oven to 180C/350F/Gas 4.
2. Place the cream, milk, garlic and seasoning into a saucepan over a medium heat and bring to the boil, then stir in the Brie to melt.
3. Place a layer of the sliced potatoes into an ovenproof gratin dish, and cover with some of the cheese and cream mixture. Repeat until all the potato slices have been used, then pour any remaining liquid over the top.
4. Dot small pieces of the butter over the top of the dish, and bake in the oven for 10-15 minutes, or until golden-brown and bubbling.
