Ingredients
1 romero pepper
100g/3½oz goats' cheese
salt and freshly ground black pepper
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Place the whole pepper directly over the flame of a gas hob or use a mini-blowtorch to blacken the skin all over.
3. Peel the skin off the pepper. Slice the pepper in half, removing the seeds and core.
4. Crumble the goats' cheese into the pepper halves and season with salt and freshly ground black pepper.
5. Place the stuffed pepper halves onto a non-stick baking sheet. Transfer to the oven and bake for 10-12 minutes, or until the cheese is melted and golden-brown.
6. To serve, place the baked pepper halves onto a serving plate
