Ingredients
100g/3½oz rump steak, trimmed and very finely chopped
¼ red pepper, finely chopped
50g/2oz green beans, finely sliced
1 tbsp tomato ketchup
few drops Tabasco sauce
1 tbsp Worcestershire sauce
½ lemon, juice only
1 tbsp chopped fresh parsley
To serve
1 free-range egg yolk
1 slice crusty bread, toasted and drizzled with oil
Method
1. Place the chopped steak into a mixing bowl. Add all the remaining ingredients except the egg yolk and toast and mix well.
2. Place a chefs' ring onto a serving plate and fill with the steak mixture.
3. To serve, remove the chefs' ring, top with the egg yolk and serve with toast.
