Peppered roast rib of beef

Ingredients

675-900g /1½-2lb topside, sirloin or rib of beef
2-3 tbsp black peppercorns, finely crushed
salt
cooking fat or oil

Method

1.Pre-heat the oven to 220C/425F/Gas 7.
2. Roll the beef in the crushed peppercorns until completely covered. Season with salt.
3. Brown the meat in a hot roasting pan, then place in the pre-heated oven. A joint of this size will take between 20-40 minutes to cook, but this very much depends on how you would like to eat it. Cooking for 20 minutes will keep it rare, 30 minutes medium and 40 minutes medium to well done. Once cooked, leave the meat to rest for 15-20 minutes before carving. This will relax the meat and it will become even more tender.
