Ingredients
For the pan-fried steak
1 tbsp olive oil
100g/3½oz fillet steak
2 tbsp plain flour
salt and freshly ground black pepper
miniature bottle of brandy
150ml/¼ pint double cream
1 tbsp chopped fresh chives
For the Italian-style potatoes and sprouts
100g/3½oz new potatoes
100g/3½oz Brussels sprouts
1 tbsp olive oil
4 tbsp chopped fresh parsley
Method
1. For the pan-fried steak, heat the oil in a frying pan. Dredge the steak in the flour and season all over with salt and freshly ground black pepper.
2. Fry the steak for two minutes on each side, then pour in the brandy and carefully flambé.
3. Stir in the cream and chives and simmer gently until slightly thickened.
4. Meanwhile, for the Italian-style potatoes and sprouts, boil the potatoes and sprouts in a saucepan of salted water until almost tender, then drain.
5. Heat the oil in a pan, add the vegetables and fry for five minutes. Stir in the parsley.
6. To serve, place the steak onto a serving plate with the vegetables and spoon over the creamy sauce from the pan.
