Ingredients
For the pasta
3 tbsp coriander
3 tbsp parsley
3 tbsp basil
5 tbsp olive oil
1 orange, zest only
1 garlic clove
200g/7oz freshly cooked pasta
salt and freshly ground black pepper
For the stuffed veal
25g/1oz mozzarella
100g/3½oz veal escalope, flattened
2 tbsp olive oil
Method
1. To make the pasta sauce, blend in a blender the coriander, parsley, basil, olive oil, orange zest and garlic until it's a smooth sauce.
2. Fold this into the hot cooked pasta in a bowl and season.
3. For the veal, wrap the cheese around the flattened veal and secure it with a cocktail stick.
4. Sear in a hot pan with the oil and cover and cook for four minutes or until cooked through.
5. Serve the pasta with the veal.
