Vegetable noodle stir-fry

Ingredients

1 tbsp olive oil
½ onion, chopped
1 garlic clove, chopped
½ red chilli, chopped
1 head broccoli, cut into florets
2 tbsp soy sauce
½ orange, juice only
dash sesame oil
100g/3½oz egg noodles, cooked according to packet instructions, drained
2 tbsp chopped fresh coriander
orange and lime wedges, to garnish

Method

1. Heat the olive oil in a wok, add the onion and fry for 2-3 minutes, or until softened. Add the garlic and chilli and fry for another 1-2 minutes, then add the broccoli and soy sauce. Stir fry for 3-4 minutes, or until the broccoli is tender.
2. Stir in the orange juice, sesame oil and cooked noodles and fry over a medium heat for 2-3 minutes, or until warmed through.
3. To serve, pile the stir-fried noodles into a serving bowl and garnish with orange and lime wedges.
