Ingredients
½ sweet potato, peeled and chopped
1 carrot, peeled and chopped
½ onion, chopped
1 garlic clove, finely chopped
400ml/14fl oz hot chicken or vegetable stock
25g/1oz fresh peas
salt and freshly ground black pepper
1 tbsp chopped fresh chives
1 tbsp chopped fresh parsley
Method
1. Place the sweet potato, carrot, onion and garlic into a pan and pour over the hot stock. Bring the mixture to the boil, then turn down the heat and simmer for 8-10 minutes, or until the vegetables are tender.
2. Add the peas and simmer for a further 2-3 minutes, then season, to taste, with salt and freshly ground black pepper.
3. Add the chopped herbs and stir through.
4. Serve immediately.
