Ingredients
1 tomato, roughly chopped
2 spring onions, finely chopped
½ cucumber, roughly chopped
small handful fresh basil, torn
small handful fresh flatleaf parsley, torn
2-3 tbsp olive oil
½ lemon, juice only
salt and freshly ground black pepper
Method
1. Mix all the ingredients together in a large bowl and season, to taste, with salt and freshly ground black pepper. Serve immediately.
