Ingredients
2 thick slices of bread
1 tbsp olive oil
1 clove garlic, crushed
½ yellow pepper, de-seeded and sliced
4 mini mozzarella balls
handful fresh basil
4 cherry tomatoes, sliced in half
sea salt and freshly ground black pepper
Method
1. Preheat the grill to its highest setting.
2. Brush the bread with the oil and rub in the garlic.
3. Layer the remaining ingredients onto the bread, season and place under the grill for 2-3 minutes, until cheese is bubbly. Serve.
