Steak 'Maman Blanc'

Ingredients

2 x 225g/8oz rump or sirloin steaks
sea salt and freshly ground black pepper
1 tbsp olive oil
30g/1oz unsalted butter
100ml/3½fl oz water

Method

1. Season the steaks with sea salt and freshly ground black pepper.
2. Heat the olive oil and butter together in a large frying pan over a medium heat until the butter starts to foam. Increase the heat and add the steaks to the pan and cook for 2-3 minutes on each side (for medium rare), or until cooked to your liking. Transfer the steaks onto two warm plates to rest.
4. Pour the water into the hot pan to deglaze. Using a wooden spoon, scrape the base of the pan to release the caramelised residue. Pour the pan juices over the steaks and serve immediately.
