Ingredients
For the kebabs
200g/7oz beef fillet, chopped into large pieces
1 tbsp brown sugar
1 tsp ground mixed spice
1 tbsp olive oil
salt and freshly ground black pepper
For the couscous
200g/7oz couscous, cooked according to packet instructions
2 tbsp olive oil
½ lemon, juice only
25g/1oz black olives, pitted and chopped
handful fresh mint, chopped
salt and freshly ground black pepper
To serve
lemon wedges
fresh parsley
Method
1. For the kebabs, place the beef into a bowl along with the sugar, spice and oil and mix to coat the beef.
2. Thread the beef pieces onto two skewers and season well with salt and freshly ground black pepper.
3. Heat a griddle pan and cook the kebabs over a high heat for 4-5 minutes on each side, or until cooked to your liking.
4. For the couscous, place the couscous, olive oil, lemon juice, olives and mint into a bowl, mix well and season with salt and freshly ground black pepper.
5. To serve, place the couscous salad onto a plate, top with the kebabs and garnish with lemon wedges and parsley.
