Ingredients
1 tbsp olive oil
3 spring onions, trimmed and finely chopped
1 leek, trimmed, halved and thinly sliced
1 small bunch fresh dill, finely chopped
400ml/14fl oz vegetable stock
600g/1lb 5oz frozen peas
salt and freshly ground black pepper
Method
1. Heat the oil in a saucepan over a high heat. Add the spring onions, lower the heat to medium, and fry for 1-2 minutes until soft.
2. Add the leeks and fry for 2-3 minutes until soft. Add the dill and fry for one minute.
3. Add the stock and the peas, bring to the boil then reduce the heat and simmer for one hour, stirring occasionally.
4. Season, to taste, with salt and freshly ground black pepper and serve.
