Potato fondant with homemade beef burger topped with a fried egg

Ingredients

For the homemade burger
2 tbsp olive oil
¼ onion, finely chopped
100g/3½oz minced beef
1 tsp chopped fresh thyme leaves
1 free-range egg yolk
salt and freshly ground black pepper
For the potato fondant
½ large potato, peeled
55g/2oz butter
300ml/10fl oz boiling water
½ chicken stock cube
For the fried egg
1 tbsp vegetable oil
1 free-range egg

Method

1. For the burger, heat one tablespoon of the oil in a frying pan and sauté the chopped onion for five minutes until just soft.
2. In a bowl, mix the minced beef, thyme and egg yolk together. Add the softened onion and season with salt and freshly ground black pepper. Shape into a burger patty using your hands.
3. Heat the remaining oil in the same frying pan. Fry the burger patty for 3-4 minutes on each side until brown and cooked through.
4. For the potato fondant, cut the peeled potato into a circle about 5cm/2in thick. Heat the butter in a small deep frying pan. Add the potato and lightly fry the base.
5. Mix the stock cube with the boiling water and pour over the potato. Simmer gently for 15 minutes, or until the potato is cooked and the base is golden-brown.
6. For the fried egg, heat the oil in a small frying pan. Crack in the egg and fry for three minutes or until cooked to your liking.
7. To serve, place the fondant potato on a plate, place the burger on the potato and finish with the fried egg.
