Pommes Lyonnaise with feta cheese, thyme and roasted garlic

Ingredients

dash olive oil
½ sweet potato, peeled, thickly sliced
1 onion, finely sliced
1 clove garlic, chopped
55g/2oz feta, crumbled
2 sprigs fresh thyme
salt and freshly ground black pepper

Method

1. Preheat the oven to 200C/400F/Gas 6.
2. Heat the olive oil in an ovenproof frying pan, add the sliced sweet potato and gently fry for 2-3 minutes. Add the onion and garlic and fry for 4-5 minutes, or until the sweet potato and onions are golden-brown.
3. Add the feta and thyme and season with salt and freshly ground black pepper. Place into the oven to bake for 5-6 minutes, or until golden brown on top.
4. Spoon into a serving dish and serve.
