Ingredients
250g/9oz minced beef
½ onion, finely chopped
1 garlic clove, crushed
1 free-range egg, lightly beaten
salt and freshly ground black pepper
1 tbsp cheddar, grated
flour, for dusting
2 tbsp olive oil
handful fresh parsley leaves
handful fresh tarragon leaves
Method
1. In a bowl, mix together the beef, onion, garlic, egg and salt and freshly ground black pepper.
2. With wet hands, press the mince into a ball and make a hole to the centre.
3. Press the grated cheese into the centre of the ball and cover over with mince. Flatten into a burger patty and dust with flour.
4. Heat one tablespoon of olive oil in a frying pan and fry the burger for four minutes each side, or until completely cooked through.
5. With the remaining one tablespoon of olive oil, dress the herbs and season, to taste, with salt and freshly ground black pepper.
6. Pile the herbs on a plate and top with the burger to serve.
