Ingredients
50ml/2fl oz olive oil
2 ready-made flour tortillas
2 cloves garlic, chopped
½ tsp dried chilli flakes
½ tsp lemon juice
1 ripe avocado
salt and freshly ground black pepper
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Oil two heatproof bowls. Place a tortilla inside and then sandwich in place with the other bowl.
3. Place in the oven and bake for five minutes, or until the tortilla basket is crisp.
4. Brush the other tortilla with some oil, then bake on a flat sheet for five minutes until crisp.
5. Place the garlic, chilli flakes, lemon juice, avocado and oil in a mini-food processor, season with salt and freshly ground black pepper and mix until smooth.
6. To serve, spoon the guacamole into the tortilla basket and serve on a warm plate with the baked tortilla broken into pieces to dip on the side.
