Ingredients
110g/4oz green beans, chopped in half and blanched
1 tbsp chopped fresh parsley
1 tbsp chopped fresh basil
2 tbsp thinly sliced leeks
1 tbsp olive oil
½ lemon, juice only
40g/1½oz blue cheese
Method
1. Place the beans, parsley, basil and leeks into a bowl.
2. Place the olive oil and lemon juice into a clean bowl and mix together well.
3. Add the lemon vinaigrette to the green beans and mix well.
4. Top with blue cheese and serve.
