Ingredients
1 free-range egg yolk
½ shallot, finely chopped
½tsp white wine vinegar
50ml/2fl oz olive oil
100g/3½oz green beans, blanched, refreshed
salt and freshly ground black pepper
Method
1. In a large bowl whisk together the egg yolk, shallot and vinegar. Gradually add the oil while whisking to create a thick emulsion, and then season, to taste, with salt and freshly ground black pepper.
2. Add the beans to the dressing and mix together.
3. To serve, pile the beans high on a plate.
