Ingredients
½ red onion, finely chopped
1 clove garlic, finely chopped
½ beef tomato, de-seeded and finely chopped
3 mini white pitta breads, torn into small pieces
2 tbsp canned cooked chickpeas, rinsed and drained
55g/2oz spinach leaves
2 tbsp olive oil
1 tbsp balsamic vinegar, plus extra to serve
6 fresh basil leaves, torn
Method
1. Combine all of the ingredients in a bowl and mix thoroughly to combine. Serve on a plate with an extra drizzle of balsamic vinegar.
