Ingredients
For the steak
4 x 250g/9oz sirloin steaks
12 oysters, shucked
salt and freshly ground black pepper
25g/1oz butter
1 tbsp olive oil
For the potatoes
25g/1oz butter
1 tbsp olive oil
3 King Edward potatoes, peeled and thickly sliced
salt and freshly ground black pepper
For the onions
2 red onions, cut into wedges
2 tbsp olive oil
salt and freshly ground black pepper
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. For the steak, cut a small pocket in the side of each steak using a sharp knife. Place three oysters into the pocket in each steak and press down lightly to spread the oysters out inside the steak. Season with salt and freshly ground black pepper.
3. Heat a frying pan until hot. Place the butter and olive oil into the pan and, when hot, add the steaks. Cook for 2-3 minutes on each side, or until cooked to your liking. Remove from the heat and set aside to rest on a plate for five minutes.
4. For the potatoes, heat the butter and oil in a pan and add the potatoes. Fry over a medium heat for 6-8 minutes, turning occasionally, or until golden-brown and tender on both sides. Season, to taste, with salt and freshly ground black pepper.
5. For the onions, place the onion wedges onto a baking sheet and drizzle with the olive oil. Season with salt and freshly ground black pepper.
6. Place in the oven and roast for 15 minutes, turning halfway through, until golden-brown.
7. To serve, place a steak onto each of four serving plates with some sautéed potatoes and roasted onion wedges alongside.
