Ingredients
For the salad
½ head broccoli, cut into florets and thinly sliced on a mandoline
1 orange, peeled, segmented
4 cherry tomatoes, quartered
4 mussels, steamed, shells removed (cooking liquid reserved)
For the dressing
½ red chilli, finely chopped
3 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp lemon juice
1 tbsp reserved mussel cooking liquid (see above)
Method
1. For the salad, place all of the salad ingredients together into a bowl and mix well to combine.
2. For the dressing, whisk together all of the dressing ingredients until well combined.
3. To serve, place the salad onto a serving plate and drizzle over the dressing.
