Beef koftas and guacamole tortilla wraps

Ingredients

For the beef koftas
200g/7oz beef mince
2 cloves garlic, finely chopped
salt and freshly ground black pepper
1 tbsp olive oil
For the guacamole
1 ripe avocado, peeled, stone removed, chopped
½ lemon, juice only
¼ onion, finely chopped
2 tbsp Greek-style yoghurt
1½ tbsp chopped fresh coriander leaves
salt and freshly ground black pepper
To serve
2 flour tortillas
3 tbsp Greek-style yoghurt
pinch paprika
squeeze lime juice
fresh parsley, to garnish

Method

1. Soak five wooden skewers in a bowl of cold water for ten minutes.
2. For the beef koftas, mix the beef mince, chopped garlic, salt and freshly ground black pepper together in a bowl and then press around the wooden skewers to form a sausage shape. Rub with olive oil, then cook in a hot griddle pan for 4-5 minutes all over, or until golden-brown and cooked through.
3. For the guacamole, place all of the guacamole ingredients into a food processor and blend to a rough purée.
4. To serve, spread the tortillas with the guacamole, fill with the hot beef koftas (removing the wooden skewers) and add a spoonful of Greek-style yoghurt. Sprinkle over the paprika and squeeze over the lime juice to taste, then roll the tortilla up into a sausage shape, cut in half on the diagonal and pile onto a serving plate.
