Pineapple tatin

Ingredients

For the pineapple tatin
50g/1¾oz butter
50g/1¾oz brown sugar
½ tsp ground cinnamon
½ tsp ground ginger
½ tsp freshly ground black pepper
½ pineapple, cut into one-inch cubes
3 tbsp soft butter, softened
1 large size of bread to fit a medium frying pan
icing sugar, to dust
double cream, to serve

Method

1. Pre-heat the oven to 180C/350F/Gas 4.
2. Melt the butter and the sugar together in a medium sized frying pan.
3. Add the spices and cook for two minutes.
4. Add the pineapple. Spread the bread generously with the softened butter.
5. Place the bread on top of the pineapple mixture, butter-side down and place in the pre-heated oven for 8-10 minutes.
6. Dust with the icing sugar and pour over double cream to serve.
